How to Make an Easter Bunny Cream Tart

With the help of our KitchenAid Stand Mixer

Easter: it’s a time to get together, enjoy the sunshine and eat copious amounts of chocolate. If baking is also on your agenda this year, we found a delicious cream tart recipe for you to try. Just don’t forget to save us a slice!

You will need

For the cream tart

  • Butter
  • Caster sugar
  • Vanilla extract
  • Plain flour
  • 2 eggs – one whole, one yolk

For the white chocolate ganache

  • Heavy cream
  • White chocolate
  • Cream cheese

How to make

1. In a stand mixer, cream the butter, sugar and vanilla together until well combined
2. Add the flour, egg and egg yolk until a dough is formed
3. Place the dough between two pieces of parchment paper (so it doesn’t stick) and gently roll the dough out to approximately 3mm thick
4. From the dough, cut out two bunny shapes – you might want to use a stencil for this!
5. Bake for 10 minutes or until the edges are a light golden brown
6. For the ganache, bring cream just to the boil in a small saucepan
7. Remove the cream from the heat, add white chocolate and stand until melted
8. Stir the ganache mixture until smooth and glossy
9. Refrigerate until completely cool (this should take around 1 hour)
10. Place room-temperature cream cheese into the bowl of your stand mixer and beat until smooth
11. Add in the cooled ganache mixture, continuing to beat until the icing is thick and holds its shape
12. To decorate, spoon the mixture into an icing bag with a nozzle attached and pipe dots of ganache onto the first layer of the bunny cake
13. Gently transfer your second layer of bunny cake on top of the first layer, and continue piping dots of ganache until the surface is covered
14. Now for the fun part! Decorate with pastel eggs, chocolate eggs, sugar flowers and fresh flowers
